Bistek w/ Tri-tip (Beef Steak)

Ingredients

  • Vegetable Oil
  • 2 lbs of Tri-tip, thinly sliced, 1/4 inch (can also substitute Sirloin or Chuck)
  • 1/2 cup + 2 Tbsp Soy Sauce
  • 1/4 cup Lemon or Calamansi Juice
  • 1 Tbsp Brown Sugar
  • 2 medium Onions, sliced into rounds
  • 1/4 cup Water
  • Black Pepper

Directions

  1. Place meat in freezer for 30-60 minutes to slightly firm up for easy slicing.
  2. Combine Soy Sauce, Lemon, Brown Sugar. Marinate the meat slices in the mixture for a minimum of 3o minutes (best if overnight). In hot oil, sear beef slices and set aside. Reserve marinade.
  3. Cook onions in the beef/sauce drippings. If pan is dry, add a little oil. Cook for maybe 2 minutes until the onions turn light brown from absorbing the sauce. You don’t need it to be translucent yet.
  4. Move onions to the side and add beef back in with the reserved marinade and water. Try to get the beef at the bottom and the onions on top. Let simmer on low for 10 minutes, covered. You want the meat on the bottom to simmer in the liquid.
  5. Give it another stir, top with pepper
