- 1/2 Tbsp Kosher Salt
- 1/2 Tbsp Garlic Powder
- 1/2 Tbsp Onion Powder
- 1/2 Tbsp Smoked Paprika
- 1/2 Tbsp White Pepper
- 1 tsp Chili Powder
- 1 tsp Fennel Seed
Recipe Ingredients
- 4 Russet Potatoes
- 1 @BluehouseSalmon Fillet, skin removed, cut into 1 inch cubes
- Seasoning Mix
- 2 Tbsp Butter
- 4 sprigs of Rosemary
- 1/2 Lemon, sliced
- 1 cup Heavy Cream
- Salt
- Olive Oil
Directions
- Drizzle Olive Oil on Potatoes, season with salt, bake at 350 for 1 hour or until a fork can pierce through easily
- Season Salmon cubes, enough seasoning to coat each cube (about 1.5 Tbsp).
- In Medium Heat, sear each cube. When you flip the Salmon, add Butter, Lemon Slices, and Thyme to the pan. Tilt the pan (Lemon and Thyme towards the bottom), and spoon the melted butter onto the Salmon cubes, basting each piece.
- When Salmon is fully cooked, remove from heat, set aside. Add Heavy Cream and 1 Tbsp of seasoning, then simmer on low until sauce thickens. Discard Thyme and Lemon,
- When Baked Potato is done, cut in half, assemble each Potato by adding Salmon cubes and spooning some sauce on each Potato! Garnish with more Thyme
